Smithfield Station VA Wine & Brew Festival
Smithfield Station is proud to present the following catering options for the Smithfield, VA Wine and Brew Fest.
Full orders are prepared to serve 20 people and half orders 10 people per selection. All are priced exclusive of tax.
Smithfield Station will setup all items by your designated time in your chalet or reserved table in an artistic manner and will provide all necessary cutlery, condiments and serving utensils. We will also have staff on duty to assist you with your needs as well as clean up after the festival. Smithfield Station is proud to use only Smithfield Products brand in our preparation of all pork items.
Cubanitos -Tender thinly sliced pork loin with honey mustard, sliced dill pickle, Emmental cheese, and sweet ham layered between two slices of sourdough bread. Smithfield Products: Smithfield Boneless Pork Loin, Honey Ham
Pork Saltimbocca -Tender slices of Charles Henry Gray Ham, sautéed spinach and garlic, and fresh mozzarella on warm bruschetta.

Cypriot Style Pork Kebobs - Cubes of pork seasoned with oregano and mint, skewered with lemon quarters and char grilled. Served with a yogurt and mint Talatouri sauce. Smithfield Product: Smithfield Boneless Pork Loin
Bacon Wrapped Roasted Bread Cheese - Smithfield bacon wrapped around a traditional Finnish cheese known for not melting, then roasted and served with a Romesco sauce. Smithfield Product: Smithfield Bacon
5 Spice Pork Belly Banh Mi - Roasted pork belly seasoned with traditional Asian five spice blend, sliced and stuffed into mini baguettes with miso vinaigrette and pickled cucumbers. Smithfield Product: Smithfield Pork Belly
Crayfish Stuffed Roulade of Pork with Creole Crème Fraiche - Tender, sweet crayfish wrapped in a thinly pressed pork seasoned with a lemon blackening spice blend and served with cool creole aioli. Smithfield Product: Smithfield Pork Tenderloin
Ham and Gruyere Potato Rosti - A cast iron seared potato “pancake” with salty-sweet ham and rich gruyere cheese. Served with chive crème fraiche. Smithfield Product: Smithfield Black Forest Ham
Porchetta Arancini - Breaded risotto balls stuffed with slow roasted, rosemary infused pork lardons and fresh mozzarella cheese.

Herb Crusted Pork with Fried Clam Belly - A play on New England clam chowder with tender slices of herb crusted pork topped with parsnip puree and a fried clam belly. Smithfield Product: Smithfield Pork Tenderloin
Shrimp Cocktail Display - Chilled jumbo shrimp, peeled and deveined and seasoned with Old Bay displayed on ice carving of a clam shell (50pc)
Gourmet Cheese Board - Display of Gruyere, Van Gogh, Buttermilk Bleu, Fontina, and aged cheddar cheeses served with bread crisps, sugar coated pecans and preserves
Peppered Goat Cheese Stuffed Pork Tenderloin with Tomato - Onion Jam Tender medallions of pork topped with pepper crusted goat cheese and a sweet and sour tomato and red onion jam. Smithfield Product: Smithfield Pork
Tenderloin Marcona Almond Stuffed Dates Wrapped in Charles Henry Gray Ham - Sweet dates stuffed with a marcona almond then wrapped in Smithfield’s signature Charles Henry Gray Ham and roasted to sweet and salty perfection. Pork Rillettes with Pumpernickel Toast - A smooth spread of shredded pork shoulder served with crisp pumpernickel toast points and spicy cornichon aioli.

Antipasto Skewers - skewers of fresh mozzarella cheese, sundried tomatoes, artichoke hearts and Greek olives drizzled in balsamic vinegar

Real Smithfield Ham Biscuits – House made cheese biscuits with shaved Charles Henry Gray ham
Charcuterie Plate – display of assorted smoked sausages, summer sausages, pickled meats, and bruschetta
Meats and Cheese Display - display of assorted smoked sausages, summer sausages, pickled meats, bruschetta as well as Gruyere, Van Gogh, Buttermilk Bleu, Fontina, and aged cheddar cheeses served with bread crisps sugar coated pecans and preserves.
Fresh Fruits and Cheese Display - sugar coated grapes, spring ripened strawberries, blackberries and blueberries and fresh cubed melons with blueberry yogurt dressing topped with toasted coconut as well as Gruyere, Van Gogh, Buttermilk Bleu, Fontina, and aged cheddar cheeses served with bread crisps sugar coated pecans and preserves.
All items must be paid for in advance of festival. Order deadline is Saturday, April 7, 2012.
